Tomatoes (and our non-bacon BLTs) may still be a dream for weeks to come, but we have no shortage this year when it comes to eggplant!
I picked up three of these Japanese Eggplants at 101 Market in Elk River, because one can never have too many eggplants (and we needed something to replace the spinach with).
